Ingredients:
4 eggs
1 cup pureed squash
1 tbsp. maple syrup
2 tbsp. sour cream
1/2 cup Parmesan cheese
1/2 cup tapioca flour
2 tbsp. coconut flour
1 tsp. sage
1 tsp. garlic powder
3/4 tsp. salt
1/2 tsp. baking soda
1/4 cup caramelized onions (optional)
How to:
1) Get out large mixing bowl and scramble the 4 eggs together
2) Add in squash, maple syrup, sour cream, Parmesan cheese
3) Mix well
4) Add in another container the tapioca flour, coconut flour, salt, sage, garlic powder, and baking soda
5) Mix well
6) Combine the wet and dry ingredients and mix until incorporated
7) Stir in any additional ingredients like onions
8) Fry on medium heat for about 4 minutes on the first side and 3 minutes on the 2nd
9) Enjoy! Serve with maple syrup for a real treat.
